The Best Vegan Banana Bread
This banana bread is super easy to make and is a great breakfast or dessert.
If you’ve been in quarantine for some time now, there’s 98.9% chance you’ve made banana bread. It’s been all over the internet and for good reason, banana bread is so delicious and easy to make. I know I’ve made this recipe more times than I can count, and we’ve devoured it in less than 2 days each time. No shame here!
Fun fact, one of the first recipes I made when I started baking at a very young age was banana bread. And after going vegan, this was the first successful baking item I made, woohoo!
You can eat the bread for a snack or dessert, but my favorite way is toasting it and eating it for breakfast with coffee, YUM!
Main ingredient
This recipe is very simple and most likely you have all the ingredients on hand. The main part is of course the bananas. Make sure you use ripe bananas, so if you’re like me and buy an excessive amount of them when you go grocery shopping, this is the perfect time to use them up. And let’s face it, they usually ripen before you even notice.
I know some people hate ripe mushy bananas, but they’re not only perfect for this bread, but you can also slice them up and freeze them for smoothies, banana nice cream, oatmeal, etc.
Variations
The very first time I made this bread I used pistachios and by far it’s my favorite. Feel free to use any other nut, I love it also with peanuts.
You can also add the nuts in the batter if you wish or even add chocolate chunks or chips.
Tips
Make sure to NOT overmix the batter.
After the batter is mixed and poured into the pan, make sure you bake immediately since we used a combination of vinegar and baking soda as a leavening agent and we want to maintain that fluffiness.
Vegan Banana Bread
Ingredients
- 1 cup flour
- 1/2 cup quick cook oats
- 1/2 tsp baking soda
- 1 tsp baking powder
- Pinch of salt
- 1/2 tsp cinnamon
- 1/3 cup melted vegan butter
- 1/2 cup packed brown sugar + more for topping
- 3 ripe medium bananas
- 1 tsp vanilla
- 1 tsp white vinegar
- 1/4 cup oat milk
- 2 TBSP chopped cashews or pistachios
Instructions
- Preheat the oven to 350°. Mix all the dry ingredients and set aside. In a large bowl mash the bananas with a fork, add the sugar and mix well. Add the butter, milk, vinegar, vanilla and mix well.
- Incorporate the dry ingredients just until combined (don't over mix) and pour into a loaf pan sprayed with oil. Sprinkle the nuts on top along with some sugar.
- Bake immediately for 50-55 minutes until you insert a toothpick and it comes out clean.
