Vegan Buttermilk Pancakes

A few tips
If you don’t have lime juice for the buttermilk you can use white vinegar. I prefer lime juice because it adds a slight hint of flavor.
Do not overmix the pancake batter, once the lime juice and the baking soda mix it's important to maintain those bubbles for extra fluffiness.
I prefer cooking my pancakes on a non-stick pan and a little butter. This makes those crispy edges we all love!
Top your pancakes with berries, bananas, butter, syrup, etc.
Make these pancakes a little bit more kid-friendly by adding sprinkles to the batter, chocolate chips, banana slices, etc.
This recipe makes 4 - 5 pancakes, feel free to double the recipe.
Vegan Buttermilk Pancakes
Ingredients
- ½ cup + 1 TBSP plant milk (I used almond)
- 1 tsp fresh lime juice
- ½ tsp vanilla extract
- ½ cup all-purpose flour
- A pinch of salt
- 1 TBSP white sugar
- 1 tsp baking powder
- ¼ tsp baking soda
- Butter
- Syrup
- Fruit for topping
Instructions
- To make the buttermilk mix the lime juice, milk, and set aside for 10 minutes.
- In the meantime, melt a little bit of butter on low-medium heat in a non-stick pan.
- Mix all the dry ingredients together in a small bowl, add the buttermilk and vanilla and mix until combined (do not overmix!).
- Pour portions of the batter into the pan and cook until small bubbles form on the top, flip over and cook 1 – 2 minutes more.
- Serve with fruits and syrup.
