Vegan Peanut Butter Cookies

These delicious peanut butter cookies are perfectly crisp on the outside and tender on the inside, it’ll be very hard to eat just one! They are full of peanut butter flavor and are perfect with a tall glass of cold oat milk.

Like all my recipes these are SUPER EASY to make and will be ready in no time! They only need 6 simple ingredients that you probably have in your pantry.

Easy step-by-step instructions

  1. Mix the peanut butter, sugar, applesauce, and vanilla in a bowl until well combined. Add the flour, and baking powder and mix with a spatula until the dough forms.

  2. Place the dough in the freezer for 20 minutes.

  3. Preheat the oven to 350°. With the help of a tablespoon form 12 balls and place them one inch apart on a non-stick or parchment-lined baking sheet.

  4. With a lightly floured fork press each dough ball twice making a crisscross pattern and sprinkle with sugar if desired.

  5. Bake on the top rack of the oven for 15 – 18 minutes or until slightly golden on the bottom. Place the cookies on a cooling rack for a few minutes and enjoy.

A few tips

  • Use all-natural peanut butter instead of traditional. Natural peanut butter usually contains just peanuts and sometimes a hint of salt. It has no added sugars, oils, preservatives, etc. Natural peanut butter is much runnier which makes it perfect for this recipe.

  • Make sure you stir your natural peanut butter! Natural peanut butter separates in the container, simply take a spoon and stir until creamy.

  • Bake the cookies on the top rack of the oven to prevent uneven cooking and burning.

  • If you want to make the tops a little bit crispier you can sprinkle a little bit of brown sugar or even chopped peanuts on top of each cookie before baking.
